By Request: Salsa


Two for Tiffani, both nabbed from a Mexican themed online gift shop I stumbled on while working:

Two Tomato Salsa

2 cup diced unpeeled plum tomato
1 cup unpeeled green tomato
1/2 cup diced green bell pepper.
1/4 cup chopped purple onion.
1 tbs finely chop jalapeno pepper
1 tbs finely chop fresh cilantro
1 clove minced garlic
1/4 tsp salt.
1/8 tsp coarsely ground pepper.
2 tbsp fresh lime juice
1 tbsp olive oil.

Combine all ingredients in a bowl. Stir well.



Mango Salsa

1 large mango, peeled and cubed (small cubes)
1/4 cup red bell pepper, diced
1 1/2 tbs fresh basil, finely chopped
1 1/2 tbs red wine vinegar
3 tsp lime juice
1/2 tsp sugar
1 jalapeno pepper, seeded and finely chopped (skip this if peppers aren't your thing.

In a medium bowl, combine all ingredients. Mix well.
Let stand at room temperature half hour before serving or refrigerate up to 24 hours. Use it quickly, this does not keep well and will go over fast.
